01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber, sliced into 0.4 inch rounds
03 - 2 medium carrots, peeled; one cut into sticks, one sliced into thin ribbons
04 - 1 small red bell pepper, sliced into strips
05 - 1 small yellow bell pepper, sliced into strips
06 - 6 cherry tomatoes
07 - 1 black olive, sliced thin
→ Dip
08 - 7 oz Greek yogurt or sour cream
09 - 2 tablespoons mayonnaise
10 - 1 tablespoon fresh lemon juice
11 - 2 tablespoons fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and pepper, to taste
# Directions:
01 - Slice cucumber into 0.4 inch rounds. Cut one carrot into sticks for arms and slice the other into thin ribbons for scarf. Slice bell peppers into small strips for hat, buttons, and scarf accents. Thinly slice black olive for eyes and mouth.
02 - Arrange three cauliflower florets vertically on a large platter in ascending size to form the body. Place cucumber rounds at the base. Add carrot sticks for arms and carrot ribbons around the neck as a scarf. Use olive slices for eyes and mouth, small carrot piece for nose, and bell pepper strips to form hat and buttons. Surround with cherry tomatoes and remaining vegetables as garnish.
03 - In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, chopped chives or dill, and minced garlic. Season with salt and pepper to taste.
04 - Place dip in a small bowl alongside or within the platter for dipping. Serve immediately to maintain crispness.
